If there's not table available when you want to eat at the VIM, you can either try a different venue or take a pager and go off and have a drink (or two) and they'll buzz you when a table is ready. For an extra fee (or if you book the right room level) you get certain perks. Iberostar Grand prices at the same as ERC for us and I'd pick IGP over ERC as they are also a very elegant resort and have a nice beach!
